Quick Christmas Mincemeat
1kg pack mixed dried fruit 1lb apples, peeled & finely chopped Knob of butter (about half an ounce) 8oz soft brown sugar 6oz vegetarian suet Grated rind and juice of 1 orange Grated rind and juice of 1 lemon 1 teaspoon cinnamon Half teaspoon ground nutmeg 4 tablespoons alcohol - sherry, brandy etc. (Spice quantities can be adjusted to taste.)
Start by peeling and finely chopping the apples. Melt the butter in a pan and gently cook the apples. (This makes sure they don't ferment in the mincemeat mixture.) Allow to cool completely.
Mix together all the ingredients. This is best done in two large mixing bowls. Cover and leave for 24 hours, stirring occasionally.
Pot into cold sterilised jars and cover.
To sterilise jars, wash in soapy water, rinse well and then place in a cool oven - 130C/250F/Gas ½ - for 15-20 minutes.
